Taos, New Mexico
Buying a whole, half, or quarter beef in Northern New Mexico.
We have been managing cattle in the Taos valley since 1952. When you buy beef from us by the whole, half, or quarter, it is cut the way you choose.

What custom means here
Cut the way your household cooks.
With a whole, half, or quarter beef, you choose how it is cut. We go through a cut sheet together: which steaks you want, which roasts, and how much goes to ground beef.
We quote pricing based on the actual breakdown and current availability, so you know what it costs and why.
Which size fits
Whole, half, quarter, or a box.
Whole beef
The most beef at once, cut entirely to your cut sheet. Whole orders take longer because of processing schedules.
Half beef
Ideal for a family freezer, with your choice of cuts. Also on the longer end for timing.
Quarter beef
A smaller share with a mix of cuts.
Beef box
Not ready for a share? Boxes of mixed cuts for everyday cooking.
